Cocktail no. 01 | The West End Spritz

We are excited to introduce our cocktail series featuring recipes by talented barman Shaun Layton.

Here is his recipe for the The West End Spritz  which is a take on the classic Aperol Spritz. 

The Aperol Spritz is a light, bubbly, aperitif style cocktail that one may drink while sitting on a patio in the late afternoon in Milan, or Venice for example. Aperol is a light, bitter sweet liquor from Italy, made by the Campari family. It is known as Campari’s “younger, hotter sister” . The Pok Pok drinking vinegar will give the drink extra flavour and acidity, complementing the Beefeater 24 gin, a London dry style gin with the addition of Sencha and chinese green teas.  

West End Spritz

  • 30 ml Beefeater 24 gin
  • 15 ml Aperol
  • 10 ml POK POK honey vinegar
  • 3 dashes Scrappy’s lavender bitters
  • 60 ml club soda

Method – Build ingredients in order over ice in a Schott Zwiesel collins glass, top with soda! Garnish with sliced cucumber and grapefruit.
